Whether it's France's Piedmont, or Persia mountains or even medieval Afghanistan, each historical area was famous for its herbs mixture. Our saltmakers (we call them «busolleros») decided to reconstruct these recipes in Ukraine. For instance, we take one of the rare Italian herb seasonings. We cut and dry the plants, add salt, and keep it all in the dark (almost like whiskey). This is how we obtain the «Salt passport» of each region. Sometimes, we'd spend hours digging into the old cookbooks.

MILLIMETERS OF SEA SALT
One of our methods is called «salt crust». A layer of herbs is covered with a layer of sea salt about 2 centimeters thick. Under such a «crust» a special microclimate is formed: the herbs are saturated with salt, and the salt, in its turn, is infused with herbs and begins to blossom with natural aromas. And we still have not told you our main secrets.
Most of the herbs one can find in the spice department are dried in the usual way and cannot preserve the freshness of plants. At the same time, salt is the first natural preservative known to mankind, and was used throughout history to make products last longer. This is why our salted fresh herbs still feel like summer and even retain their color, where dry herbs... fall flat.

Salt of such quality and texture cannot be obtained quickly. The process can take from three days to several weeks. We mix the concoction of herbs and salt, leave it to dry for additional drying, and then check the readiness of the components a few times. Each batch is a special blend and there is no need to rush here.

BUSOLLERO
The Busols Craft Salt Farm opened in 2020.
According to Ukrainian Wikipedia, Busol is «a large migratory bird with a long, straight beak», or an ordinary stork. It is an eternal symbol of Ukraine, as ageless as the sky and salt.
Storks live right in front of our farm in the Muzychi village of Kyiv region.
We watch the storks and throw fresh herbs into salt.
